While you can enjoy Will & Co coffee at a number of incredible cafes around Sydney and beyond (not to mention in your own home), our HQ Tasting Bar in Bondi is the heart of who we are – and what we do best.
Located on the corner of Beach Road and Gould Street, it’s a place where beach goers and coffee enthusiasts unite. From the moment you step inside, you’re welcomed into a space that captures the essence of Bondi Beach, with natural light beaming through the roller doors, florals and greenery on every surface, and a blend of ocean blues, crisp whites and light timber throughout.
Enjoy the sweet sounds of Tom Misch and Jordan Rakei flowing through the speakers while you appreciate artwork from Bondi-locals Aquabumps and Steve Smith adorning the walls and even our Probat Coffee Roaster. The Will & Co HQ Tasting Bar is the perfect peaceful oasis for you to relax, unwind, and savour a perfect cup (or two) of specialty coffee.
Speaking of coffee, as soon as you look at the menu, you’ll know why we’ve dubbed it our “Tasting Bar”, as coffee is well and truly the star. While you can enjoy all the classic espresso beverages, it’s our Brew Bar and cold coffees – the coldies – that truly shine. Indulge in specialties like our Oat Milk Cold Brew (served on tap), Vanilla Ice, and Cold Brew Tonic or treat yourself to the ever-indulgent coffee shake made with Mapo fiordilatte gelato. Who knew you could enjoy coffee in so many different ways?
Our favourite of the menu is our “Brew Bar'' section, offering bottomless batch brew, V60 pour-overs with your choice of single origin beans, and tasting flights that introduce you to a variety of flavours. Long story short, this isn’t your everyday cafe – we take coffee drinking to another level. While coffee comes first, sweet snacks from Clovelly’s Tuga Pastries (including their famous pastel de nata and almond croissants) are on offer to accompany your perfect cup.
Looking to do some brewing at home? No worries – we sell our full selection of coffee beans, pods and grounds at the Tasting Bar alongside a variety of brewing equipment, including the Splendid Wren x Will & Co crockery line and select items from Kinto’s slow style coffee line. Up your game with our complete line of Will & Co merch and surf wax from Ninth Wave, a local Bondi business that donates 10% of profits towards mental health organisations.

I seem to remember the space being open a few years back – what happened?
Right you are, dear friend. We originally opened the space back in 2019, but unfortunately had to shut our doors to the public when a little virus decided to pay us a visit… Instead, we focused our efforts on supporting our cafe partners to ensure their wellbeing during an incredibly tough trot for the hospitality industry. The good news is the Tasting Bar has now reopened, ready to welcome our mates (that’s you) once again.
Why isn’t the Tasting Bar open on Mondays and Tuesdays?
Our HQ Tasting Bar is a hybrid space – part cafe, micro roastery, concept store, barista training studio and community space. When we’re not slinging mighty fine brews for people like you, we’re doing all that other fun stuff.
Can I buy your coffee beans to enjoy at home? Also, is it possible to have them ground for espresso/AeroPress/Plunger/etc.?
You sure can (and it sure is). We sell our full selection of coffee beans, grounds, pods and merch at the Tasting Bar so you can enjoy them at home. If you need beans ground for a particular brewing method, just let the team know and they’ll get you sorted.
Am I able to work from the Tasting Bar?
We definitely welcome people to pop open their laptops or meet up for a brainstorming session. Though we do have some outlets available, they’re limited to the lounges, so we recommend coming with your electronics fully juiced.
Do you rent out the space at all?
